What Makes A Craft Whisky?

That’s not for us to say. That’s for you to decide. Enjoyment is in the loins of the beholder. If you like the taste, it shouldn’t matter if it came from a small batch producer or the corporate stills of a big spirits conglomerate. We don’t hate big spirits. Why would we? They were the ones who opened our mouths to whisky in the first place. Do we dream to be as big as them one day? No, not even close. We’re dedicated to our small ways because it keeps us honest and modestly paid. Are we committed to good honest work? Heck yes. Are we committed to locally sourced ingredients? Frig ya. That’s what got us here in the first place. 

We can trace our roots back to some agricultural connections and the hard work and dedication it takes to grow any kind of grain. We want to honour that. We don’t take shortcuts to flavour country. We embrace the hard work and aim to share it with those we love. We know we’re not the only ones who think this way, so we’re counting on y’all’s similar mindsets to help us grow. We’re new. Our whisky is new. None of that means it’s bad. It’s actually pretty damn good. So saddle up partners, we get 50 miles to the gallon on this hawk and we’re ready to flock like the salmon of Capistrano.
